  • Dinner with Uncle Nate and Auntie Manuh

    Continuing my tradition this year, I invited our long time friends over for dinner. I remember before Nate and Amanda were together Amanda used to make the long 6 hour trip up here to stay for a couple of days…or even a week at times and bunk with Kim. During the day, Kim would be working and Amanda would be bored so, we would toodle around town and then head back to my place to eat. Then, there was the day our conversation turned to boys (oh my!) and the questions concerning a good buddy of mine were approached and I smiled. Hmmm, I saw the future and my good friend Amanda living up here and we would get to spend more time together than we did between the few hours Kim was working and the time I was in school. So, yeah, I told her he was a good guy and that she should just fall head over heels in love with my goofy buddy. I think she agreed…
    At any rate, in spite of my high hopes for more time with my buddy Amanda. It hasn’t worked out that we’ve spent more than a few minutes together since she’s been here!! Hah, so, two nights ago they came over and I cooked a nice Cuban meal. It was my first time cooking anything Cuban and it turned out to be surprisingly delicious. It was Cuban Chicken Cilantro with a side of homemade yellow rice and soft garlic bread rolls. Verrryyy yummy! Nate and Amanda brought some killer cheesecake. So, we sat around talked, ate and played….nope, not Boggle this time but, Hand and Foot! It was great! Thanks for the good times you guys and, I’m sorry that we’re leaving so soon after you two final tied the knot. I was hoping to be able to spend some quality time camping and doing other fun memorable activities. I guess that means you’ll have to bridge the gap and come for a visit in good ol’ PA!

    Awwww so sweet!! That’s neat that you are connecting with everyone before you leave. And oh my… all these meals you’re preparing. My goodness you make me hungry listening to all of it. You must post your recipes for me (especially if they are easy… I make the Fettucini with sauteed chicken in mushroom suace ALL THE TIME… ASK JEREMY!! He loves it and requests it quite often). Love you
