    It has happened before but, once again my little guy is sick. He has a fever and it makes my heart hurt. I look at his little face and think why not me…why him? I would gladly take his fever and stuffy nose so he could be happy and healthy. He woke up last night coughing and crying because he couldn’t breath. So, we put him in our bed gave him some water and let him snuggle with us. After about two hours, I had to take him back to his crib because he kept kicking me in the back of the head. Then, he’d turn and put his bottom in my face…right now he’s laying in our bed all bundled up and drooling all over the place. Poor thing…he is a mouth-breather. Last night we invited our good friends, Brent, Tabby and Jack-Jack, over for homemade enchiladas, spanish rice and guacamole with chips. Mmmm, delicious! ( I promised Tabby I’d post the recipe!) Jack and Cylas played together so well. They holed up in Cy’s room and pulled every book on Cylas’ shelves to the floor and rooted around in the toy box/wagon. While they tore the room up, we parents had fresh brewed tea and cherry turnovers with a side of Trader Joe’s chocolate covered pretzels! The boys sneaked in every now and again to check on us. They nibbled on the goodies and crawled back to the room…I say crawled because Jack still crawls and Cylas decided he should too. And of course, the night wouldn’t be complete if we didn’t play some kind of game! And last night’s game of choice was hand and foot! Unfortunately, we girls lost…horribly.

    I usually nix the olives because I hate them…and for the salsa I’ve found that Herdez is just right! Keep in mind you can spice up the inside of the enichis with either mild, medium or hot salsa…if that’s the case then lay off the cayenne and hot sauce! You’ll get raves with this recipe. I promise!
