  • Of Food And Love: Cheesy Potato Soup

    This is for Sis. Kari:

    Cheesy Potato Soup (4-6 main dish servings)

    4 medium potatoes (peels optional), cubed (enough to make a little over 2 cups worth)

    2 cups water

    1/4 cup onion, chopped

    1.5 tsp salt

    1/4 tsp pepper

    1/4 cup butter

    1/4 cup all-purpose flour

    2 cups milk

    2 cups (8oz) shredded chedder cheese

    1 pound bacon, cooked & crumbled

    1/2 cup sour cream (optional)

    3 green onions, diced (optional)

    Directions

    In a large sauce pan, combine the first 5 ingredients — bring to a boil

    1. Reduce heat; cover & simmer until potatoes are tender (about 17 minutes)
    2. Reduce heat to low & leave alone until step 8
    3. In another sauce pan, melt the butter over medium heat; whisk in the flour until smooth
    4. Gradually add milk; bring to a boil
    5. Cook & stir for 2 minutes, or until thickened
    6. Add cheese to milk mixture & stir until melted
    7. Add mixture to the potato pot & stir to combine
    8. Add crumbled bacon & stir to combine
    9. Serve with sour cream & green onions as garnish

    This is SUCH a phenomenal recipe. You can find almost all of these ingredients in your pantry at all times. Make this and enjoy it as the weather cools and please write a review on how you all munched it down with zeal!!

    I pulled a “Misha stunt” last night and made homemade pesto to freeze for the winter with basil from my garden…yep, check it out. I didn’t post any pics because I was too busy flinging pesto all over my kitchen to get the camera out but I will do it again and post some. Cheers!

    I cant waite tiil i get there. Im allerade packed.Mom has a lot to do .The next plane we go on is going to be aprobliem because wehave barle any time to get back on the 2ND plane.Mom got some stuff for romalease. some of the stuff are in my sucase.so when you want to get to the blankets and stuff then youll just haft to get them in my bag . we also got amonkey tree for her. when Igo there tell them that im going to smoke them in war .
