  • Pasta Salad!

    I have been on the hunt for a scrumptious pasta salad. Why am I so crazed with finding new recipes? Contrary to what some might think, it is NOT an easy task finding a recipe that your whole family likes. Sometimes, I find yummy recipes. Well, I think they are yummy until I find out that they have olives in them or nuts or call for red, hot peppers! So, I compromise and take out what I don’t like and add something to fill the void or, I just take the ingredient out period! Well, with this recipe I didn’t have to take anything out at all! It was just fine. However, now that I’m thinking about it, a little pepper might spruce it up a bit. I would suggest this as a side dish and not a main meal. We ate it as a main meal and I felt like I could have made something else to complete our dinner. I don’t have any ideas off hand. But, here it is. Give it a whirl.

    Chicken Club Pasta Salad ****
    Serves 6

    8 oz corkscrew or spiral pasta (1 cup)
    1/4 cup mayonnaise
    3/4 cup Italian dressing
    2 cups chopped cooked rotisserie chicken
    1 cup cubed Muenster or Monterey Jack cheese
    12 strips crisp-cooked bacon, crumbled
    1 avocado, cubed
    1 cup each chopped celery and green bell pepper
    8 oz cherry tomatoes, cut in half

    Cook and drain the pasta according to the package directions and rinse it with cold water.
    In a large bowl, pour a small a mount of the Italian dressing into the mayonnaise and whisk to incorporate, then whisk in the remaining dressing.
    Stir in the pasta and the remaining ingredients.

    Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmm! Yummy!
