  • Of Food And Love: Yummy tummy foods

    I’ve been stretching my comfort zone, lately.  Cylas in the kitchen.  *shudder*  It gives me a slight anxiety attack.  My son is so eager to help but he is still learning how to control his limbs which means that sometimes most of the egg, or flour, or whatever ingredient we’re working with ends up OUTside of the bowl.  That, for me, is frustrating.  I can’t lie.  Maybe I need to loosen up a little bit and quit caring about messes and just let him do what he needs to do (with a little supervision, of course).

    So, I decided that we were going to make a family favorite.
    Peanut Butter Cookies!
    I know, I know.  Two sticks of butter.  A cup and a half of peanut butter.  Not good for the waistline but so good with a cup of tea and a side of family time.
    My little helper was beside himself.  Sniffing the ingredients, waiting so patiently.
    And then the adventure began.  The mixing.
    He actually fared quite well with the mixer.  Although, my mixer almost gave up the ghost because the batter was so thick.
    Papa even helped.  You roll, you pat it, you mark it with a fork…!
    Roma had the high honors of sitting in her highchair to take in all the action.
    Cylas was dead set on having sprinkle stars in his cookies.  He got so excited…
    …that he knocked the lot of them onto the floor.  Frustrating, but he’ll learn soon enough that moving too quickly can make a big mess.  So, no sprinkles.  Not quite sure that would have tasted good anyway…
    Papa cheered him up with a man.  A peanut butter man.  They wanted to cook him.  I said no.
    Finally, the first batch of cookies are finished.  Cooled.  And perfectly ready to eat.  My munchkins dug in, milk and all.
    We had a great time.  You should try it, too!
    Here is the recipe we used:
    • 2 sticks Butter, Room Temperature
    • 1 cup Brown Sugar
    • 1 cup Sugar
    • 1-½ cup Peanut Butter
    • 2 whole Eggs
    • 2-½ cups All-purpose Flour
    • 1 teaspoon Baking Soda
    • 1 teaspoon Vanilla Extract

    Preparation Instructions

    1) Preheat oven to 350 degrees F.
    2) In a large bowl, mix together the butter, sugars and peanut butter.
    3) Add eggs, flour, baking soda and vanilla extract.
    4) Place teaspoon-size balls of dough on a prepared cookie sheet. Flatten balls by pressing down on them with a fork, making a criss-cross pattern.
    5) Bake for 10-12 minutes or until golden brown.

    Just be careful with the baking time. These little guys tend to cook fast.

    Danika! Hey dear! I'm so glad you like reading my recipes a stick of butter would be 4oz. I know…horrible but sooo yummy!
