  • Cylas cooks. Roma looks.

    And I FREAK!  It’s a cycle.  I’m so horrible.  I know I’ve mentioned my cookingwithkids fear before, and I’m getting better, but it’s not getting easier, because Roma is no longer a binky-sucking spectator.  She wants to help, too!
    A couple weeks back Cylas took the initiative and made his own Pbj.  Successfully.  He now makes them regularly and has even taken to making them for his little sister.  She loves them, even if her “sandwich” is only a piece of bread with looooots of peanut butter on it and NO jelly.  She loves it.

      I have tried to pick out certain activities to do regularly with my children.  Making pancakes is one of those activities.

    There is a beautiful quality, called trust, being developed here.  Cylas knows that I trust him to get aLL of the buttermilk in the bowl and NONE on the floor.  And he can do it, too.

    Pretty soon, it’s going to be the two of them, hands in the batter, licking the spatulas, stirring the soup or whisking the roux.  But we have to start somewhere and our somewhere is buttermilk pancakes.  And they just so happen to be my son’s all time favorite.  Seriously.  This kid would eat them for breakfast, lunch, half a snack, dinner and desert.  No joke.

    This morning I made two batches of pancakes, because I freeze the leftovers for youknowwho.  Yeah, more pancakes than you could shake a spatula at.
    My son is Nate The Great reincarnate.  Pancakes and galoshes make his world go ’round.
    And here is the recipe so you, too, can join in the fun.  They are the most perfectly, puffy pancakes, ever! (hint: add just a touch more flour than called for, that’s the key to thick pancakes.)
    Papa’s Buttermilk Pancakes

    • 1 cup Flour
    • 1 teaspoon Baking Powder
    • ½ teaspoons Baking Soda
    • 1 Tablespoon Sugar
    • ½ teaspoons Salt
    • 1 cup Buttermilk
    • 1 whole Egg
    • 2 Tablespoons Vegetable Oil

    Heat griddle on medium low heat and spray with a non-stick cooking spray.
    Sift the dry ingredients into a bowl. Whisk the buttermilk, egg, and oil together in a separate bowl and add to the dry ingredients. Whisk until well combined.
    Pour whatever sized pancakes you prefer onto the griddle. Cook on the hot griddle, flipping when the surface of pancake becomes somewhat dry and when most of the air bubbles have risen, about 2-1/2 minutes to 4 minutes on each side.
    Makes a batch of eight 3-1/2 inch round pancakes. Double the ingredients for a larger batch. Enjoy!
