  • Of Food And Love: That’s what Saturdays are made of…

    When the weather warms, it seems like there is a whole new way to look at life.  During the winter, the weekends are great, but when you have the sun shining on you and the wind tickling your neck, weekends are leaps and bounds better.  Today — no exception.  Woke up around 8 with D and we both headed for the kitchen.  His famous cottage cheese pancakes and my buttermilk biscuits.  This weekend is really special because my dad and grandfather are here.  I put in some laundry, a little reluctantly because our dryer went out two days ago, but that pile in my closet wasn’t getting any smaller.  For sure.

    But, thank goodness the weather is allowing for line drying again!
    I really like looking at the colors of our clothing…its own little rainbow.

    I’ve found that our laundry dries much better when it’s overcast or in the evening time when the breeze is light.  The sun bleaches the clothing and makes it stiff, otherwise.  No bueno.

    Mmm, so, while the clothes were whipping in the wind, breakfast was cooking on the griddle and slowly rising in the oven.
    If you’ve never made buttermilk biscuits, you must make these!

    Once again, a completely unhealthy amount of butter, but gracious so good!

    Pour two cups of flour and all your dry ingredients into a bowl, then slice up your cold stick of butter into the flour.
    Like this.
    Then, use your hands to mix and squish all the butter around.  Your batter will look something like this when you’re finished.
    Then pour in the buttermilk and, once again, use your hands to mix everything.  It’s super sticky, don’t worry, that’s normal.  Then, careful place little blobs of biscuit mix on the cookie sheet.  DON’T roll the batter into balls.
    Just plop them on there and when they’re done, in a little over ten min, you’ll have these!
    Delicious.  Especially with honey or fresh homemade jam.

    Sweet Buttermilk Biscuits
    serves 6
    2 cups flour
    1 cup buttermilk
    1/2 tsp baking soda
    2 tsp baking powder
    3/4 Tbl sugar
    1/2 tsp salt
    1 stick cold butter
    Preheat oven 450
    Mix all dry ingredients.  Then slice the cold butter and mix in.  Make a dip in the middle of the mixture and pour in the buttermilk.  Mix and place in small blobs on the cookie sheet.
    Cook for 10-15 min until the tips of the blobs are brown.
    Eat and enjoy!!
