  • Of Food And Love: Fettuccine, Mushroom and Asparagus

    Didn’t I tell you all that we love noodles?  I wasn’t kidding.  Here is what I made for dinner last night.  It’s a little twist on broccoli fettuccine alfredo.

    Actually, this is a very versatile recipe and pretty much any veggies in the fridge will work.  We stick to asparagus and mushrooms…but broccoli would definitely work.

    Rinse and chop.  Set aside.

    Take the chicken, chop in to fairly small pieces and season with salt and pepper.  Cook them nicely.  Browning them is totally optional.  We like a little crunch so I brown the chicken a bit.

    Get the noodles boiling.  Al dente!  Remember.  And don’t forget to salt the water good.  Yummm.   Throw the veggies in a pan to stir fry.  Oil.  Heat up.  Veggies in and crisp.

    Here is where creative license kicks in.  Either top this noodle dish with homemade alfredo, or go to the store and get those nifty little packets that call for 1.5 cups milk and a Tb butter.  Yup.  That easy.  I do have a great recipe for the homemade alfredo that I like to use.  I might post that later.

    Drain the noodles, put the veggies in the noodle pot and then the sauce.  Voila!  Delicious, easy and dinner is ready in about forty minutes…or less.
    Oh, and please eat this with the softest of French breads.

    There is no link…I just posted the recipe. It was shared, by word of mouth with me by a friend. Go ahead and read the blog and take notes to get the gist of the recipe. It's basically cooking your veggies and noodles then topping them with alfredo sauce. sooo yummy and easy!
