  • Of Food and Love: Honey Curry Chicken

    Last night we had an all time favorite.  Pretty much everything we make gets on the “all time favorite” list, so maybe that’s not accurate.  Either way, I found this recipe a couple years back and can’t remember who or where I got it from.  So, it isn’t mine, but please enjoy.

    It’s one of my “go-to” meals when I just CAN’T think of anything for dinner.  Three ingredients.  There are a couple of recipes in my stash which only have three or four ingredients but they do me right every time.  Who knew.  Curry powder, mustard and honey.  That’s. it.

    Melt a bit of butter in the oven as it’s heating.

    Mix those three shocking ingredients together well and pour over your chicken.

    Cook until golden brown.  I mean it.  Goodness, it’s so easy and good!

    We always have this with steamed white rice and broccoli.  My kids love this, the hubster loves this.  It’s always a hit and it only takes 20-25 min start to finish.

    Honey Curry Chicken

    4 whole Chicken Breast Or Equivalent In Tenders
    ⅔ cups Honey
    1 ounce, fluid, 2 teaspoons Yellow Mustard
    ⅔ teaspoons Curry
    ⅔ sticks Butter

    2 quart baking or casserole dish.
    Preheat your oven to 375° F.
    Place dish (with butter inside it) to warm up in the oven and melt the butter.
    Mix honey, mustard, and curry in a bowl large enough to coat your chicken in. I like to use a whisk.
    Place chicken in the bowl and coat.
    Carefully take the hot dish from the oven and pour the chicken and honey mixture into it.
    Bake for 30-45 mins until chicken is completely cooked.

    *The chicken I use is called “skinny chicken” and it takes a lot less time, hence, the 25 min time frame.

    * You can also add a dash of Cayenne pepper to kick it up a notch

    I forgot to comment! I made this last week and we loved it, since it has a little curry in it, we ate it with basmatti rice…it was super easy to make, definetly a quick go-to for any occasion! Nate loved it! And I love that it has curry, since we have my awesome bro-in-law in our fam (who is from India), my entire fam is getting into Indian food and loving it…bring on the curry!
