Me and Sunday love and hate each other on no particular schedule — for several reasons, lunch and dinner being two of the reasons I dread Sunday afternoons. What to feed my family alludes me every time. Uhg!
So, the other day I bought a rotisserie chicken (because I’m not THAT good yet) for dinner. I had leftovers the next day and warmed them in my toaster oven. I like to put a little water in the tray so there is moisture and let it sit on warm for a while, so it’s not re-COOKED, but warmed, by the time we’re ready to eat.
I had made my own bread a couple days earlier, sliced up a few pieces, toasted them with colby jack and topped it off with leafy greens, avocado and slices of tomato. I like to sprinkle a little sea salt and pepper on top, too.
That’s it! If I’d had cucumbers they would have been on there as well. My chicken was on the side giving me just enough protein.
