  • Of Food And Love: The Best Chicken Marinade

    We love chicken…and noodles….and potatoes.  And I’m always on the hunt to find different ways to prepare chicken.  There are a couple of go-to recipes I have, but they get boring.  One of my favorite ways to prepare chicken is to marinate it.  I do not like to buy the ‘marinade in a bottle’.   There are plenty of ingredients in my cupboards for me to make my own.

      Even if you have only 30 minutes until dinner is set to be on the stove, this will work.  We usually buy skinny chicken, but if you buy the thicker pieces, be sure to pound them out a little so the 30 minute marinade time will work.  It will taste better if you have an hour to let everything set, but I’m just throwing out there that this truly is a great last minute meal idea.

    My cast iron skillet has been an amazing addition.  It allows me to sear the outside just enough…

    I usually serve this along side fried potatoes and a vegetable.   Come summer time, the cast iron skillet will be set aside for the bbq  :)   Oh, how I can not wait.

    Chicken Marinade    courtesy of :: Tasty Kitchen

    1/2 cup and 1 tablespoon vegetable oil
    1/4 cup and 1 teaspoon soy sauce
    3 tablespoons Worcestershire sauce
    3 tablespoons red wine vinegar
    2 tablespoons lemon juice
    2-1/4 teaspoons dry mustard
    1/4 teaspoon salt
    1 teaspoon black pepper
    1/2 teaspoon finely minced fresh parsley
