Back in December, D took me to an amazing restaurant for my birthday. I ordered their beef short ribs over polenta with an assortment of diced veggies that weren’t too overpowering and offered a bit of color to the plate. It was amazing. The short ribs were so soft and the polenta with the veggies were the perfect mates. I’d never had short ribs before and I knew I had to find a recipe to replicate what I’d just eaten.
I found one that looked almost like the dish in the restaurant, even down to the polenta. But I botched it so badly that I discouraged myself. Then, a couple weeks ago, I was digging around in my freezer trying to find something for dinner, when I found a set of those ribs. *sigh* Second time is a charm, right?
Take a purple onion and thinly slice 3/4 of it. Once you have those pretty circles, you can cut them in half. I do, it just makes it easier to eat.
Lay them on the bottom of the crockpot. Place 6 pieces of lean, bone-in short ribs on top then sprinkle a 1 tsp salt and 1/2 tsp pepper on top.
Turn your crockpot on 6 hours and stop thinking about it. In about an hour those ribs will start tantalizing you with their smell. Ahhhh.
I served ours with baked basil potatoes and asparagus.
(for the baked basil potatoes, I simply diced them, seasoned with salt, pepper and basil and covered with 3 pats of butter, put it in the oven at 375 until they were cooked through, tossing them every once in a while)

- 1 whole Small Red Onion, Cut In Half Then Sliced
- 6 pieces Lean Beef Short Ribs, Bone In
- 1 teaspoon Salt
- ½ teaspoons Pepper
- 1-½ cup V8 Vegetable Juice
- ¼ cups Steak Sauce
If doing in your crock pot, put sliced onions in the bottom, then place the short ribs on top of onions. Sprinkle evenly with salt and pepper. Mix together V8 and steak sauce and pour over top of short ribs, cover and simmer on low for 6 hours.
If using the oven, preheat to 325 degrees. Using a covered casserole, place ingredients in the same order as for the crock pot, cover and bake for 2 hours.
